<P>PROBLEM TO BE SOLVED: To provide a method for the regulation of suppressing or promoting the aging of Sake (rice wice) prepared by mixing a tempering water consisting of an aqueous solution having a specific function through utilizing the function. <P>SOLUTION: This method for regulating the aging degree of Sake comprises storing for a specified period the Sake prepared by mixing the tempering water consisting of an aqueous inorganic acid solution or an alkaline aqueous solution of an inorganic salt. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
