PROBLEM TO BE SOLVED: To provide a method for improving the flavor of food and drink, to obtain a flavor improver for food and drink, a seasoning, and food and drink improved in flavor. SOLUTION: This method for improving flavor of food and drink is characterized by comprising a process of adding an amino-carbonyl reactant having a molecular weight of 1,000-5,000 obtained by reacting peptide with a carbonyl compound to food and drink. The food and drink is obtained by adding the flavor improver containing the amino-carbonyl reactant as an active ingredient, and this invention also relates to the seasoning containing the amino-carbonyl reactant and palatability as active ingredients and the flavor improver or the seasoning added to food and drink. |
