PROBLEM TO BE SOLVED: To provide a method for producing a frozen ground fish paste without using a polyphosphate. SOLUTION: This method for producing the frozen ground fish paste is characterized by adding an alkali metal salt of phytic acid and a sugar or a sugar alcohol to a bleached fish meat. Thereby, it becomes possible to produce the frozen ground fish paste without using the polyphosphate and having similar physical properties to those in the case of using the conventional polyphosphate. |
