The invention refers to the wine industry, in particular to a process for grape wine production. The process, according to the invention, includes two separate stages. The first stage includes grinding of the fresh grapes up to the obtaining of the grape mash, administration of the pure yeast culture leaven in the quantity of 3...5%, vacuum freeze drying under a pressure of 25...26 Pa with the obtaining of a powder with 5% humidity and hermetic packaging, and the second stage includes dilution of the powder with water in the ratio of 1:6 respectively, up to the 16% content of dry substances, fermentation and subsequent carrying out of the technological operations depending on the type of the produced wine.
