The first stage includes grinding of the fresh grapes up to the obtaining of the grape mash, administration of the pure yeast culture leaven in the quantity of 3...5%, vacuum freeze drying under a pressure of 25...26 Pa with the obtaining of a powder with 5% humidity and hermetic packaging, and the second stage includes dilution of the powder with water in the ratio of 1:6 respectively, up to the 16% content of dry substances, fermentation and subsequent carrying out of the technological operations depending on the type of the produced wine.
