PROBLEM TO BE SOLVED: To provide a thawing method intended for performing short time thawing and high quality thawing at the same time. SOLUTION: A thawing apparatus has a pressure reducing means 4 of reducing pressure in a thawing area 2 holding an object 1 to be thawed, a steam supplying means 3 of supplying steam to the thawing area 2, and a control means 8 of controlling the pressure reducing means 4 and the steam supplying means 3 to thaw the object 1 to be thawed with low-pressure steam. The control means 8 comprises a thawing process of controlling temperature or pressure in the thawing area 2 to a first set value, and an adjusting process of controlling temperature or pressure in the thawing area 2 to a second set value lower than the first set value following on the thawing process.
