A substantially purified or isolated nucleic acid or nucleic acid fragment encoding a fructosyl transferase homologue such as sucrose:fructan 6-fructosyltransferase (6-SFT), fructan:fructan 1-fructosyltransferase (1-FFT) or sucrose:sucrose 1-fructosyltransferase (1-SST) homologues, from a ryegrass (Lolium) species, Lolium perenne, or a functionally active fragment or variant thereof.
