PROBLEM TO BE SOLVED: To provide high-quality bread without leaving large air bubbles in the inner layer of bread by making included air escape to the outside even when bread dough is filled in a mold with the air included in the rolled surfaces of the bread dough. SOLUTION: The bread dough obtained by kneading raw materials for the bread is formed into a sheetlike state and the sheetlike bread dough is then rolled or folded to cut the resultant bar-like bread dough constituting layers. The cut bread dough is placed in the baking mold so that at least one cutting plane of the cut bread dough faces the upward direction. The air bubbles remaining in superimposed parts of the bread dough move in the superimposed planes and escape from the cutting plane in a process of fermenting or baking and expanding the bread dough.
