PROBLEM TO BE SOLVED: To provide an apparatus for producing frozen dessert where a high-temperature refrigerant flows into a cooler while bypassing a condenser and a decompression device to eliminate temperature rise in a compressor when performing heat sterilization. SOLUTION: The apparatus for producing frozen dessert is provided with a pressure-equalizing circuit 42 bypassing a compressor 18 and a condenser 20 to make the high-pressure side of a refrigerant circuit communicate with the low-pressure side of the refrigerant circuit, a pressure equalizing valve 43 set to the pressure equalizing circuit, and a hot gas circuit 40 bypassing the condenser and the decompression device. In the apparatus, the high-temperature refrigerant discharged out of the compressor is supplied to the cylinder cooler 11 via the hot gas circuit so that the refrigerant discharged from the cylinder cooler is sucked to the compressor to subject the mix to heat sterilization, and the pressure equalizing valve opens and closes in a temperature-raising process for the heat sterilization.
