PROBLEM TO BE SOLVED: To provide a method for simply purifying anα-hydroxy carboxylic acid, by which by-products can be removed. SOLUTION: This method for purifying theα-hydroxy carboxylic acid in a high purity is characterized by cooling theα-hydroxy carboxylic acid at a constant cooling rate (5 to 30°C / hr) to crystallize theα-hydroxy carboxylic acid. When theα-hydroxy carboxylic acid is especially mandelic acid and when phenylglycine is contained as an impurity, the cooling of theα-hydroxy carboxylic acid at the constant cooling rate can give the highly pure mandelic acid. The method for purifying theα-hydroxy carboxylic acid is a suitably used method, when a solution containing theα-hydroxy carboxylic acid as a purification target is produced by an enzymatic method.
