PROBLEM TO BE SOLVED: To provide a method for removing the kidney of a large fish, which enables the extraction of an ovary / digestive system viscera and the extraction of the kidney in a separated state, the prevention of staining due to the breakage of the viscera, the prevention of the staining of the fish body on the removal of the kidney, and thereby the supply of the ovary, the fish flesh portions, and the kidney as clean food materials, and to provide an apparatus therefor. SOLUTION: This apparatus is characterized by comprising a portion 11 for charging a work of fish body, a pre-treating portion 19 comprising a fin-cutting portion 18, a belly-cutting portion 16 and an ovary / viscera-extracting portion 17, and a kidney-removing portion 20 comprising a portion 20a for cutting a kidney-covering celomic membrane and a portion 20 for sucking out the kidney.
