PROCESS FOR PRODUCING beta-CYCLODEXTRIN

A process for producing beta-cyclodextrin from a substrate other than starch efficiently, which comprises reacting a maltoligosaccharide containing 2-10 glucose units with cyclodextrin glucanotransferase at a temperature below 40 °C in a solution containing an organic solvent which, when added excessively to a beta-cyclodextrin solution, precipitates at least 50 % of the beta-cyclodextrin.
