摘要 PURPOSE: Functional kimchi containing chlorella and a preparation method thereof are provided, thereby improving physical constitution to prevent adult disease, removing heavy metals from the human body, and removing agricultural chemicals from raw materials of kimchi, so that stability of kimchi can be improved, and storage period of kimchi can be increased. CONSTITUTION: The method for preparing functional kimchi containing chlorella comprises the steps of: (a) removing impurities from the surface of the raw materials for kimchi; (b) removing impurities from the core of the raw materials for kimchi; (c) salting the surface of the raw materials for kimchi in salt solution containing sun-dried salt and chlorella; (d) salting the core of the raw materials for kimchi in salt solution containing sun-dried salt and chlorella; (e) mixing the salted raw materials for kimchi with salted fish sauce and kimchi seasoning containing chlorella; and maturing the kimchi at 3 to 4 deg. C.
