摘要 PURPOSE: A process for preparing soy sauce and soybean paste using Salicornia herbacea(salty pasture) is provided, thereby preparing soy sauce and soybean paste having an appropriate salty taste without adding salt, and no impurities such as magnesium salt, calcium salt or potassium salt, so that it can be useful as food for a person suffering from hypertension, heart disease or diabetes. CONSTITUTION: The process for preparing soy sauce and soybean paste using Salicornia herbacea(salty pasture) comprises the steps of: inserting Salicornia herbacea(salty pasture) and 0.03 to 0.05 wt.% of unpolished rice vinegar into a pot; sealing and maturing the pot for 10 to 15 months to obtain 16% Salicornia herbacea(salty pasture) solution; drying and pulverizing Salicornia herbacea(salty pasture) to prepare 22% Salicornia herbacea(salty pasture) powder; dipping nephrite in water for 3 days to prepare nephrite water; mixing the Salicornia herbacea(salty pasture) solution with nephrite water, and dipping 40 to 50 wt.% of fermented soybeans in the mixed solution; adding a pocket containing nephrite and Salicornia herbacea(salty pasture) powder into the fermented soybeans containing mixed solution; and maturing them for 180 days.
