PURPOSE: Natural antifungal preservative containing heated garlic extract is provided. The antifungal preservative has improved antifungal activity, has improve storage and pH stability, and does not result in adverse side-effects in the human body. CONSTITUTION: A method for preparing the natural antifungal preservative containing heated garlic extract comprises the steps of: (a) heating garlic in water at 90 to 100 deg. C for 5 to 15 minutes to inactivate allinase in garlic; (b) cooling and pulverizing the allinase inactivated garlic and centrifuging the pulverized garlic to obtain an extract of garlic; and (c) heating the extract of garlic at 100 to 190 deg. C for 10 minutes to 10 hours.
