PROBLEM TO BE SOLVED: To provide a secondary drying system for rice cracker dough so designed as to be automatically and continuously operated. SOLUTION: This secondary drying system for rice cracker dough is provided with a secondary drying device comprising a rotary dram 8 rotationally held on a shaft in a drying chamber the temperature of which is kept to be suitable for secondary drying operation, and structured so as to have ventilation; a plurality of small-diameter stirring cylindrical bodies 9 radially arranged in an axis direction of a rotary shaft of the rotary dram so as to have well ventilated, and having an open/close lid at its outer side; a supply means 2 arranged at the upper part of the drying chamber and supplying the rice cracker dough; and a discharge means 5 set at the lower part of the drying chamber for discharging the rice cracker dough subjected to the secondary drying out of each of the stirring cylindrical bodies. A plurality of the secondary drying devices are set in line in a transferring direction of the rice cracker dough in a rice cracker manufacturing line. A transfer conveyer 6 quantitatively receives the rice cracker dough subjected to primary drying via a measuring means and transfers the dough to the supply means, and the rice cracker dough discharged to the lower part of each secondary drying device via the discharging means is conveyed to a next firing process.
