The present invention relates to a method for producing steviol in high yield from a steviol glycoside mixture using -galactosidase. According to the present invention, since steviol is produced directly from the steviol glycoside mixture rather than purified products such as stevioside, it is possible to simplify the steviol production process and increase yield of the steviol. Therefore, the method for producing steviol enables mass-production of steviol in industrial fields.
