摘要 In a method of processing soft garlic or powdered garlic, original flavor and odor of garlic are removed. The method is also employed to increase sugar content of the garlic. The method of processing the soft garlic includes preliminary treating raw garlic to semi-dry and to saccharify the raw garlic before directly steaming the raw garlic, and the method of processing the powdered garlic is applied to compress and dry the soft garlic.
