<p>The present invention relates to a method for processing holy thistle fruit for subsequent extraction thereof wherein the method is characterized in that the starting fruit is first optionally pre-dried, subsequently it is subjected to separation of mechanical impurities wherein there follows an optional separation of fat-containing endosperm for the fist elimination of fatty fraction. Further the fruit is pressed to ensure final structure and shape of the degreased fruit and at the same time to remove fat therefrom as an organic by-product with less than 9.0 percent by weight of fat, whereby the fruit temperature is maintained during the processing at ambient temperature, at the most at the temperature of 35 degC, except for the action of elevated temperature during the pressing step.</p> |
