PURPOSE: A method of making an apple chocolate product by mixing sliced apples with apple juice and glucomannan, freeze drying and then coating with chocolate is provided. The product has excellent taste and flavor and high palatability and is storable for long periods of time and useful as a between-meal snack for young boys and girls. CONSTITUTION: Apples are selected, washed and then cut to a size of 1 to 5mm after removal of the inedible portion of apples. Thereafter, 100g pretreated apple pieces are mixed with 30 to 50g apple juice and 5.0g glucomannan, formed into a predetermined shape, freeze dried at -35 to -45deg.C for 20 to 30hr and dried at 40 to 50deg.C for 20 to 30min. The freeze dried molded product is coated with liquid chocolate and then dried.
