METHOD FOR RETAINING NITRILASE ACTIVITY

PROBLEM TO BE SOLVED: To provide a method for stably retaining extremely unstable nitrilase activity of a solution or dispersion of an immobilized substance of a gram-negative bacterium having nitrilase activity or its enzyme for a long period of time in producing ammonium carboxylate by using the solution or dispersion. SOLUTION: The method for retaining nitrilase activity comprises making at least one kind selected from a nitrile, an amide, a carboxylic acid and their salts as a stabilizer exist in the solution or dispersion of the immobilized substance of the gram-negative bacterium having nitrilase activity or its nitrilase enzyme.
