<P>PROBLEM TO BE SOLVED: To provide retort or chilled pasta as an individual food, easily filled in a pouch or molded container by controlling water content rate and sterilizing. <P>SOLUTION: This method for producing the pasta filled in the pouch, molded container or the other tightly sealed container comprises a process of absorbing water by immersing the pasta made as a dried state in water for making 25-50 % water content rate, a weighing and filling process of draining water, then weighing the immersed pasta and filling in the pouch or molded container, an α-forming process of steam-cooking the pasta or pasta filled in the pouch or molded container by a high temperature instant cooking and sterilizing machine, a process of water-absorbing and steam-cooking of making 55-65 % water content rate by adding water to the α-formed pasta and then steam-cooking by a pressurized steam cooking device and a sealing process of tightly sealing the pouch or molded container with gas substitution or without gas substitution. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
