PROBLEM TO BE SOLVED: To provide the roll gap adjusting device of a huller capable of minimizing the surface damage of unmilled rice or the lowering of a hulled ratio caused by a change in the surface states of rolls, and a roll gap adjusting method using it. SOLUTION: The current value of a drive motor for rotationally driving rolls is detected and, after the interval between the rolls is reduced from the mutually separated posture of the rolls to perform the mutual approach and contact of the rolls, the interval between the rolls is increased to perform the mutually separating operation of the rolls and, on basis of the increase/decrease value of the current value or the stored current value, a position where the rolls reach a mutually separated state after the mutual contact state of the rolls is recognized as a separation reference point f(f<SB>1</SB>, f<SB>2</SB>). The rolls are separated by predetermined interval from the separation reference point f(f<SB>1</SB>, f<SB>2</SB>). By this method, the interval between the rolls can be adjusted so that the rolls are not separated by predetermined interval from such a state that the mutual bite-in quantity of the rolls becomes zero and the influence of the surface states of the rolls due to the use time of the rolls is hardly imposed.
