PROBLEM TO BE SOLVED: To provide a manufacturing method of a gas-barrier laminate for obtaining a film free from chlorine in a structure and excellent in oxygen gas barrier properties in a high humidity, and a laminate thereof, in more moderate conditions than usual. SOLUTION: A coating (C) for forming a gas-barrier layer which contains sugar (A) and an olefin-maleic acid copolymer (B) is applied on a plastic base directly or with an undercoat layer interlaid, and it is subjected to heat treatment and then heated in the presence of water.
