<P>PROBLEM TO BE SOLVED: To provide a method for processing fishes of the order Pleuronectiformes becoming easily edible by all persons by removing the backbone and entrails by the minimum cutting open, further restoring the shape of the fishes of the order Pleuronectiformes and improving the appearance. <P>SOLUTION: The method for processing the fishes of the order Pleuronectiformes comprises the following steps. A step of cutting the backbone 9 of the fishes 1 while forming a first cutting plane line 7 from the head part 2 of the fishes 1 of the order Pleuronectiformes along the gill cover 3, a step of forming a second cutting plane line 8 between the head part 2 and the caudal fin part 6 in the direction nearly perpendicular to the first cutting plane line 7, a step of cutting the body open along the cut, a step of removing the entrails 10 and backbone 9 and a step of closing the cut open body and restoring the shape of the fishes. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
