PURPOSE: A microorganism Weissella koreensis and a method for preparing kimchi using the same microorganism are provided, thereby reducing the maturation time of kimchi, constantly reproducing kimchi having improved taste, and delaying acidification of kimchi to maintain the taste of kimchi. CONSTITUTION: The microorganism Weissella koreensis (KCTC 10400BP) is useful as a starting microorganism of kimchi, wherein Weissella koreensis (KCTC 10400BP) is isolated from matured kimchi. The method for preparing kimchi comprises the steps of: inoculating Weissella koreensis (KCTC 10400BP) into unmatured kimchi in the amount of 10000 to 10000000 cells per 1g of unmatured kimchi; and maturing the Weissella koreensis (KCTC 10400BP) inoculated kimchi at 0 to 10 deg. C.
