PURPOSE: A method for manufacturing a beverage by mixing an Opuntia ficus-indica var. Saboten Makino extract, xanthan gum, pectin, xylitol, fruit juice and food additives is provided. The beverage has uniform quality and contains the active ingredient of Opuntia ficus-indica without the destruction. CONSTITUTION: Stems and/or fruits of Opuntia ficus-indica are washed several times, added with 1 to 5 times of purified water and then extracted at 90 to 95deg,C for 1hr or more, followed by filtering with 100 mesh filter. Then, 80 to 90% by weight of the Opuntia ficus-indica extract is mixed with 0.1 to 0.2% by weight of xanthan gum, 0.05 to 0.1% by weight of pectin, 2.5 to 4.0% by weight of xylitol, 1 to 1.5% by weight of apple vinegar, 3 to 4% by weight of fruit juice, 1.5 to 2.5% by weight of polydextrose, 1 to 1.5% by weight of honey and/or a trace amount of food additives. The mixture is agitated at 80deg.C for 10min, packaged and then sterilized at 80deg.C for 15min.
