The invention relates to a proteinaceous food product (1) comprising a core of raw minced meat (2), which has a transverse section of less than 20 mm<2> and which is disposed in an outer casing (3) of hydrocolloïd material. The invention can be used, for example, to limit the agglomeration of the food product (1) in both the raw and cooked states. The invention also relates to a machine and a method which are used to produce said product, as well as to minced meat in block or loose form, comprising a plurality of proteinaceous foodstuffs. |
