A mould for forming blocks of congealed liquid comprises a tray 20, subdivided into compartments 26 by a grid 24, and a holder 28 for the block in each compartment, the holders being provided with suction cups 36 for securing the holder to the base of the tray while the liquid congeals. It is stated that the suction is automatically released as the liquid is cooled or frozen. The adhesion of the blocks to the holders is increased by projections 30, 32 on the stems of the holders. Alternatively the stem may taper from its lower to its upper end (Fig. 5, not shown). The tray and grid may be made of plastics or metal, which may have a patterned surface coated with an anti-sticking wax or plastics, and the suction cups are formed of polyethylene or rubber. The liquids to be congealed may include water, with or without colouring or flavouring, milk, cream, fruit juices, jellies or puddings.
