<P>PROBLEM TO BE SOLVED: To obtain retort resistant, antifreezing and syneresis-suppressing Konnyaku which can suppress the syneresis in a freezing distribution or an acidic region or under a long period of preservation, and syneresis/discoloration-suppressinng colored Konnyaku which can suppress the discoloration, and provide methods for producing them. <P>SOLUTION: The method for producing the retort resistant, antifreezing and syneresis-suppressing Konnyaku comprises a first process for mixing water, 2.0-5.0 wt.% konnyaku powder, 0.01-0.5 wt.% processed starch and 0.01-0.5 wt.% color matter based on the total weight containing water, a second process for mixing 0.01-0.3 wt.% alkali agent with the mixture obtained in the first process, a third process for producing colored gel Konnyaku by heat-gelling the mixture obtained in the second process and a forth process for dipping the colored Konnyaku gel obtained in the third process in an organic acid solution. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
