<P>PROBLEM TO BE SOLVED: To provide a method for producing carbon dioxide-containing jelly, in which a large amount of carbon dioxide can uniformly be dispersed and contained in a final product and scattering of carbon dioxide during production steps is minimized, being suitable for mass production and industrially ready. <P>SOLUTION: The method for producing the carbon dioxide-containing jelly comprises packing a jelly liquid containing a solution containing carbon dioxide and a jelly-forming agent into a container and cooling and solidifying the jelly liquid. The jelly liquid is prepared and produced so as to satisfy the following requirements: (a) A soluble solid content of the jelly liquid is ≤35%. (b) A viscosity of the jelly liquid is ≤40 mPa s at 70°C. (c) A gelling temperature of the jelly liquid is ≤50°C. Further, a deacylated gellan gum is used as the jelly-forming agent, and further, sucralose is used as a sweetener having high sweetness. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
