<P>PROBLEM TO BE SOLVED: To provide a water-in-oil emulsified composition having excellent melting feeling in the mouth and shape retention at room temperature, low specific gravity and excellent palate feeling. <P>SOLUTION: This water-in-oil emulsified composition with foaming property contains oil and fat containing diglyceride and liquid sugar. The oil and fat has (a) 0.5-5 wt.% of solid fat at 25°C and (b)≥40 wt.% of 16-18C unsaturated diglyceride, and (c) the ratio of the oil and fat to the liquid sugar of (1:0.5)-(1:4). <P>COPYRIGHT: (C)2005,JPO&NCIPI |
