PROBLEM TO BE SOLVED: To allow even a single edge part to favorably cut buckwheat needles with no discomfort regardless of a right hander or a left hander and to diffuse buckwheat noodle making to a general household by reducing the production cost. SOLUTION: The single edge part 2 is formed in a lower side edge part of an approximately square plate shape edge body 1, an approximately square hole shaped window hole part 3 is formed in the upper part of the edge body, and a grip body 4 is formed in a residual part between the window hole part and the upper side edge part of the edge body.
