摘要 <P>PROBLEM TO BE SOLVED: To provide an oil-in-water emulsion obtained via such a simple operation as to use ordinary emulsifier and also simply add/formulate choline without requiring inclusion of lysed yolk or lysed lipid obtained as an emulsifier through specific treatment. <P>SOLUTION: The oil-in-water emulsion is obtained by emulsifying a water phase and an oil phase using the emulsifier. The oil-in-water emulsion is excellent in heat resistance, and added/formulated with choline.
