摘要 PROBLEM TO BE SOLVED: To provide a sugar concentration measuring apparatus for performing sugar concentration measurement with respect to unripe after-ripening type fruit, and for precisely predicting the sugar concentration of the ripe after-ripening type fruit after the after-ripening treatment. SOLUTION: The sugar concentration measuring apparatus for measuring the quantity of light absorption by fruit juice contained in fruit and vegetables and for measuring the sugar concentration of the fruit and vegetables, based on the measurement result has a light reception section 4 comprising a spectral section 4a for receiving light L2 transmitted from the after-ripening type fruit 10 and for dispensing the light L2; a photoelectric conversion section 4b for photoelectrically converting light L3 inputted from the spectral section 4a and for outputting light absorption information S3 corresponding to the light L3; and an arithmetic processing section 4c for measuring the quantity of absorption light by the sugar of the fruit and vegetables, based on the light absorption information S3 and CH group and OH group in starch, and predicting the sugar of the after-ripening type fruit 10 after ripening by using a calibration curve for indicating the relationship between the amount of light absorption obtained in advance and sugar after ripening of the after-ripening type fruit 10.
