PROBLEM TO BE SOLVED: To provide a method for producing low-protein bread of good taste. SOLUTION: The wheat flour for bread dough is replaced with low-protein rice powder partially (≥10 %) or wholly and the rice powder is baked according to the usual bread-baking method.
