PURPOSE: A method of making noodles by soaking a raw potato in a mixture of salt, vinegar and water, heating the soaked potato within a short time and then mixing the crushed potato with wheat flour is provided. The product maintains the characteristic flavor and taste of a potato without the destruction of nutrients. CONSTITUTION: A raw potato(1) is washed, peeled and then soaked in a mixture of 18 to 25% by weight of salt(2), 5 to 10% by weight of vinegar(3) and 60 to 70% by weight of purified water(5). Then, the potato is heated for 1.5hr to minimize the destruction of nutrients, soaked in cold water and chopped with a chopping means(7) and kneaded with wheat flour, starch, soybean powder, spirits and purified salt, followed by extruding to give noodles(10). |
