PURPOSE: A method of making a fermented soybeans drink by mixing fruit juice and fermented soybean powder is provided. The product is enriched in nutrients, has good taste and thus is useful as a functional drink. CONSTITUTION: The fermented soybeans drink is prepared by mixing 10 to 75% by weight of fermented soybeans powder and 90 to 25% by weight of liquid fruit juice and agitating for 2 to 3hr. The liquid fruit juice is prepared by crushing fruit flesh and adjusting the pH of fruit juice to 3.5 to 5.5. The fermented soybeans powder is prepared by the steps of: soaking soybeans in water at 3 to 15deg.C for 1 to 4 days; boiling the soaked soybeans in water at 85 to 110deg.C for 1 to 2hr; spreading the steamed soybeans(20) on rice straw(151), covering with cotton blankets(154) and fermenting at 20 to 30deg.C for 4 to 7 days in a fermentation chamber made of loess(110); drying the fermented soybeans for 12 to 24hr to a moisture content of 5 to 3% and grinding. |
