PROBLEM TO BE SOLVED: To provide a method for producing a backbone-removed fish body (a bone-less fish body) by which the yield of the product and the quality of the fish body of the product are improved, and the production cost is reduced. SOLUTION: The method for producing the backbone-removed fish body comprises inserting an upper and lower pair of separating bodies into a head part-removed fish body from the head part side by driving a separating body-moving device, and extracting the inserted separating bodies to form a bone aggregate including small bones into a free state from fish meats. The method also comprises nipping and extracting the backbone by driving a bone-nipping body-moving device to insert a pair of bone-nipping bodies from the head part side into the fish body from which the head part is cut off, in which the bone and the flesh are separated, and from which the tail end part of the backbone is removed, and nipping and extracting the backbone to extract the bone aggregate including the small bones from the flesh.
