<P>PROBLEM TO BE SOLVED: To provide nutritious rice excellent in taste and palate feeling, applicable to cooking in a short time so as to easily be blended at home. <P>SOLUTION: The embryo-attached polished rice is obtained by polishing brown rice. The rice is produced so that at least a pericarp layer is removed from the surface of the rice but an aleurone layer and an embryo bud still remain. The method for producing the embryo-attached polished rice comprises the following process: rotating a cylindrical brush with hair implanted at its outer surface in a cylindrical vessel where the predetermined amount of brown rice is housed; and circulating the brown rice housed in the vessel so as to rise up between the sidewall of the vessel and the cylindrical brush passing through the lower part of the cylindrical brush. Through the process, the surface of the brown rice is polished with the cylindrical brush so that at least the pericarp layer of the brown rice is removed but the aleurone layer and the embryo bud still remain. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
