<p>An agent for the production and/or treatment of alcoholic beverages, especially wine or sparkling wine, consisting of microcapsules having internal contents consisting of cells of >=1 species of microorganism and/or one or more enzymes and each having a membrane sheath which completely envelops the internal contents of the capsule, the membrane sheath comprising >=2 radially superposed layers where each layer completely envelops all the layers lying radially beneath it, and the membrane sheath being impermeable to the cells and enzymes in the interior of the microcapsules but permeable to the educts to be converted by the cells or enzymes and to the conversion products.</p> |
