<P>PROBLEM TO BE SOLVED: To provide particles containing a lipophilic compound and having a narrow particle size distribution by covering the surfaces of droplets of the lipophilic compound unstable to water, light, oxygen, or the like. <P>SOLUTION: A spiral gas flow is generated in a spray tower 1 by introducing a gas containing starch dispersed therein from a spout 3 installed in a side surface in the spray tower 1. An emulsified dispersion obtained by dispersing fat-soluble vitamins is sprayed from a nozzle 2 in the gas flow to form coated particles of the fat-soluble vitamins having the surface coated with the coating agent (starch). By the generation of the spiral gas flow, nearly uniform coated particles are formed because the retention time of the emulsified dispersion and the coating agent in the spray tower 1 is prolonged.
