Production (P1) of resveratrol (3,4',5-trihydroxystilbene E isomer) with a purity above 98% comprises deprotecting 3,4',5-tribenzyloxystilbene with a combination of an aluminum halide and a N,N-dialkylaniline. An independent claim is also included for production (P2) of resveratrol in which diethyl 4-benzyloxyphenylphosphonate is subjected to a Wittig-Horner reaction with 3,5-dibenzyloxybenzaldehyde to give 3,4',5-tribenzyloxystilbene (E isomer).
