摘要 PURPOSE: Provided are a balut extract and a method for preparing the same by double-boiling, wherein the balut extract is excellent in taste and flavor by removing unpleasant taste and flavor peculiar to the balut and is thus useful as a nourishing food. CONSTITUTION: The for preparing the balut extract is characterized by double-boiling 89-96 wt.% of balut, 3-10 wt.% of Angelica MAKINO and 0.01-1.0 wt.% of a herb in water at 105-121 deg.C for 5-6 hours. The herb is selected from the group consisting of lemon balm, rosemary, thyme and basil.
