PROBLEM TO BE SOLVED: To provide a device for sterilizing so-called retort food so structured as to shorten a cooling process. SOLUTION: The device for sterilizing retort food conducts the following process: storing retort food 5 in a chamber 1 with an opening 2 at its upper side, supplying steam or pressurized air to the chamber so as to subject the retort food to heat sterilization under pressure followed by supplying water into the chamber via a water supply means, connecting an overflow pipe 23 to the upper part of the inside of the chamber, and supplying water up to a joined position of the overflow pipe when supplying water via the water supply means.
