PROBLEM TO BE SOLVED: To provide a roasting apparatus designed to be installed even in the store of a department store, etc., and uniformly carry out a roasting treatment by retaining the temperature environment around a roasting vessel constant. SOLUTION: A mantle heater 14 in which a heating wire 15 is sealed between a relatively thin heat conductive layer 16 and a relatively thick heat insulating layer 17 is freely detachably attached to the outer peripheral part of a roasting vessel 1. Heat energy produced by energizing the heating wire 15 additionally installed in the mantle heater 14 is made to act on the whole of the roasting vessel 1. A granular material 2 such as coffee raw beans is subjected to the uniform roasting treatment in a short time by joint actions with hot air fed into the interior of the roasting vessel 1.
