METHOD FOR ASSAYING INULIN AND ASSAYING REAGENT

PROBLEM TO BE SOLVED: To provide a method for assaying inulin with which the inulin can simply and accurately be assayed in a short time without being affected with a difference in average molecular weight and to provide an assaying reagent. SOLUTION: The maximum value L and the minimum value S of sensitivity when the inulin is assayed within the range of 2,000-7,000 average molecular weight hold the relationship of the formula. In a reaction solution or the assaying reagent in a step of hydrolyzing the inulin into fructose with an inulinase, especially (i) the exoinulinase activity is≥15 U/mL; (ii) the exoinulinase activity is≥5 U/mL and the endoinulinase activity is≥0.5 U/mL or (iii) the exoinulinase activity is≥2.5 U/ml exoinulinase activity and the endoinulinase activity is≥1.5 U/mL.
