PURPOSE: A method of making a germinated brown rice product by mixing mushroom mycelium with brown rice which is germinated with spring water containing germanium is provided. The product is removed in toxic substance and rich in nutrients and thus is useful as a health supplementary food product. CONSTITUTION: Brown rice with an embryo is immersed in spring water containing germanium for 12hr to germinate the embryo to a size of less than 0.5mm. Mushroom mycelium is inoculated into natural medium, cultured at 35deg.C for 8hr and cooled. Then, the cultured mushroom mycelium is mixed with the germinated brown rice in a ratio of 50:50, fermented in a fermentation tank for 10 days and rotated for 1min in a food mixture. The separated germinated brown rice is dried at 40deg.C or less. In the process, the germinated cereal is sterilized in 70% alcohol solution. |
