Production of a crystalline food composition with gelling or thickening properties comprises mixing a sugar with a finely divided gelling or thickening agent of animal or microbial origin, wetting a sugar with 0.01-10% water and/or alcohol (mono- or polyhydric) and intimately mixing the two products. An independent claim is also included for a food composition as above.
