METHOD FOR PRODUCING VANILLIN BY USING ALKALOPHILIC BACTERIUM

PROBLEM TO BE SOLVED: To provide a method for producing vanillin, by which it is made possible to carry out conversion of ferulic acid to vanillin in the presence of ferulic acid in a high concentration under alkaline conditions, particularly e.g. under a condition of pH 8-11, production of vanillin in high yield and reduction of processes and cost in production of vanillin. SOLUTION: The method for producing the vanillin comprises converting ferulic acid to vanillin by using alkalophilic bacteria having properties assimilating ferulic acid. COPYRIGHT: (C)2004,JPO&NCIPI
