<P>PROBLEM TO BE SOLVED: To provide a natural taste flavor which uses whey as a raw material, imparts foodstuffs with a full-bodied taste or a voluminous feeling as a "delicious" component common to foodstuffs, and also is excellent in masking the smell of skim milk powder and in heat resistance, and to provide its fabrication method and the foodstuffs flavored with the flavor. <P>SOLUTION: The taste flavor is obtained by bringing a whey treated with a protease into contact with an adsorbent and then eluting adsorbed ingredients from the adsorbent with an ethyl alcohol solution. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
